[v630i] Noob needs help!

I currently have a v630i with Vodaphone NZ brand.
I want to debrand, and upgrade. What can I upgrade to?
I've seen on the forums people talking about upgrading to k600 series.
Whats the point of this?
And how do I go about all this? Any tutorials I should read?
