Need some more advices about menu changing

First thing that is on my mind is how to add a Desktop Element shorcut of java application(in my case Gmail and Opera)?

i am not 100 % sure, but i think you can do it with menu editor


When i press the intenet button(last button on the left joystik panel),can i tweak it to run an opera instead of SEs browser?
