If I unlock/debrand (i don't know the difference) it
what extra stuff will I get or change about the phone?

unlock = allow the phone to use with all network providers
debrand = remove the network provider's firmware and replace with the manufacture's firmware.

Remove unnecessary ATT items on menus. Use flash . Can set all types of mp3 as ringtones.. and unlocking helps in reving the sim lock so you can use the phone with other network
