The shake control is kinda neat, but also kinda pointless. To use it just hold down the Walkman key (the one with the same stylized 'W' as is on the back of the phone) and give the phone a shake or flick and it should work! The feature seems to work much better if you shake the phone side to side instead of up and down.

I'm not aware of any way to turn it off.

Unfortunately I don't think this can be helped. It seems if you want the next track you need to actually use the d-pad because I haven't found any options for making the shake control not function as a shuffle to next track button.
